Food blogger shares protein-rich quesadilla breakfast

Food blogger Aston Randén told ERR’s “Terevisioon” that quesadillas make a healthy, protein-rich breakfast, especially when served with a salad. She said the key to making them is keeping them thin so the cheese melts properly.
Quesadillas are cornflour pancakes available in shops. Randén prepared scrambled eggs with some beans, then heated butter in a pan and added a quesadilla, cheese, the egg and bean mixture, and green onion. She topped it with more cheese and said ham could also be added.
For the scrambled eggs, Randén recommends heating a little butter and oil in a pan, adding beaten eggs and stirring the mixture with a spatula. She said she enjoys the creative aspect of cooking.
The sauce is made with Greek yoghurt, garlic, a little coriander, salt and lime or lemon juice. Randén said it can be prepared in a larger batch at the start of the school week and kept ready for when quesadillas are made. She also recommended serving them with a salad.
Randén described the dish as a filling snack before school and said children might be able to prepare it themselves.
